I have a confession: I LOVE Cookie Dough Ice Cream!!!! I was really bummed when I had to go gluten-free, because no one makes a gluten-free cookie dough ice cream. SO I made it myself!
It is really simple to do, take your favorite ice cream plus your favorite cookie dough. This cookie dough can be vegan, vegetarian, gluten-free, dairy-free, etc., it just has to be able to stick together.
Once you have made your favorite cookie dough, break the dough into small pieces* and freeze them on wax paper until solid (approximately 30 minutes to 1.5 hours, depending on the size of your pieces). Grab your favorite bowl, or cup in our case, scoop in your favorite ice cream and top with frozen cookie dough! If your recipe contains eggs, remember to use the chunks sparingly in the ice cream. 🙂
*We love to freeze left over cookie dough into pre-done scoops and chop a few up for ice cream!
