Let’s be honest, Blue Cheese is one of those cheeses you either love or hate. Personally I am not it’s biggest fan, but when I tried my Mom’s Bacon and Blue Cheese Stuffed Onions, my opinion changed!
Before we move to the recipe, there is a lot of debate about whether or not Blue Cheese is gluten-free. While there are some brands of blue cheese that do contain trace amounts of gluten, recent studies* are showing more brands do not contain gluten. The top three brands are St. Benoit Blue Cheese, Roquefort Blue Cheese, and Alexis de Portneuf Blue Cheese.
So pick up some blue cheese, and create away!
Bacon and Blue Cheese Stuffed Onions

1 small to medium white onion per person
1 container of Rosenborg Blue Cheese (Also known as Castello-Rosenborg. This cheese can be found in Fry’s, Albertsons, Safeway)
1/2 stick of butter
1/2 a jar (3 oz) of Hormel Bacon Bits
In a medium bowl mix everything, tbut the onions. Set aside.
For the onions: Hollow out the onions with a paring knife making a “V” cut about 1 1/2 – 2 inches deep. Save the insides.
Take the cheese mix that you set aside and shove it into the onion. Place them in a baking pan (8×8, 9×13, size depends on the amount of onions. You just don’t want the onion(s) to fall over). Bake at 350* for 40-45 minutes. Alternatively wrap each one in foil and grill them at 350* for 40-45 minutes.
Remove for the oven/grill and serve warm! Enjoy!
