Cheeseburger Mac – Gluten-free

b4u_chessymacWhen I first got married Hamburger Helper was a staple in our house, but when our family went  gluten-free suddenly my husband’s favorite helper was out. Until now.

Cheeseburger Mac
adapted from Lynn’s Kitchen Adventures : Cheeseburger Helper

1 lb ground beef – we used ground turkey
1 cup beef broth – we used chicken broth
1 3/4 cup milk  – Author note:  If you are using gluten-free pasta it might need a little more milk/liquid – we used rice milk
8 ounces tomato sauce
2 cups macaroni noodles – we used Ancient Harvest Gluten Free Organic Elbow Pasta
1 cup sour cream – while this is optional, it makes it very creamy
1 ½ cups shredded cheddar cheese
Salt to taste

In a large sauce pan brown the ground beef. Drain any fat from the meat.

Add the broth, milk and tomato sauce to the meat, stir, and bring to a boil. Once boiling, add the noodles. Reduce heat to low and cover.

Cook for 17-20 minutes.  Test the pasta after 17 minutes; if it is not done, cook a few more minutes.

Reduce heat to low. Cover and cook for 17-20 minutes. Check the pasta at 17 minutes to see if it’s done. If pasta is not done, cook a few minutes longer.

When the pasta is done, stir in the cheese and sour cream.  Let sit 5- 10 minutes before serving and it will thicken more.

Serve in your favorite bowls, or on a plate with a salad and bread.  If you find it needs more flavor, try mixing in Salsa, hot sauce, or extra sharp cheese.
