Store bought Gluten-free Bisquick is expensive and you don’t get a lot for you money.
The next time you are in a pinch mix 1 1/2 tsp baking powder + 1/2 tsp kosher salt for every cup of gluten-free flour (we like Pamela’s Artisan Flour Blend, but you can use any gluten-free flour that does not have any leavening agents in it (baking powder, baking soda, etc)). When mixing, it is important to round down (i.e. 2 1/3 cups flour = 3 tsp baking powder and 1 tsp salt). Add in the oil/butter according to your recipe.
*Something to try: If your gluten-free flour already has leavening, and you are unsure how to adjust it, try using rice flour instead. The weight of rice flour is the same as white flour. To eliminate the “course” texture of rice flour, run it through a food processor before using it.
