Being sick, sucks. Being sick on movie and hot cocoa night, really sucks. So I found a recipe for a non-dairy, sugar-free hot cocoa that is really good!
Here it is; my notes are in italics:
Vegan Hot Chocolate

4 Tbsp organic Vegan Sugar – we used 3 Tbsp of honey instead
3 Tbsp. vegan cocoa – we like to use Hersey’s Dutch Dark Chocolate
1/2 tsp ground cinnamon (optional) – a 1/4 tsp was a fun amount to add to try.
2 1/3 c plain non-dairy milk (soy, almond or rice)
1/2 tsp vanilla extract
Combine sugar, cocoa and cinnamon in a small saucepan.
Gently stir in milk – we had to whisk ours to incorporate the cocoa powder.
Warm over medium heat, stirring or whisking constantly, until hot. Do not boil.
Remove from heat and stir in vanilla.
Serves 2. **This recipe can be doubled.**
