My children loved it and drank the whole pitcher before I had more in the fridge! Next time, I think I will make a double batch 🙂Here it is; my notes are in italics:
Homemade Coconut Milk
from Elana Amsterdam’s Elana’s Pantry
2 cups unsweetened coconut
4 cups of water
1tsp of vanilla
1/2 tsp honey or 6 drops of Stevia – for sweetner (optional)
Other items: large fine mesh sieve or cheesecloth
When ready, pour the coconut and water into a blender. Add vanilla, honey or Stevia and blend on high for 2 to 3 minutes, or until the coconut is nothing but little bits. If you forget to add the vanilla and Stevia, just stir it into the coconut milk after it is strained.
Strain the mixture through a fine mesh sieve or by using cheese cloth.
Makes approx 3.5-4 cups of coconut milk. Store in a mason jar, or an air tight container in the fridge.
