Peanut Butter Protein Balls – Gluten-free, Dairy free


A few weeks ago I received a notice of these delicious chocolate chip peanut butter balls, and I knew I had to make them!  Oh, and did I mention they were no-bake?!

Not only is peanut butter its own protein, but the addition of protein powder gives it a healthy kick!

Don’t tell the kids 😉

 

Peanut Butter Protein Balls
adapted from Chocolate Covered Katie’s “Chocolate Chip Peanut Butter Balls”

1/2 c  rolled oats
1/2 cup peanut butter – *or any other nut butter, or sun butter … if you store your pb in the fridge, you might want to melt it so it stirs more easily.
stevia drops to taste, or 2 Tbsp plus 2 tsp pure maple syrup – we used 2 Tbsp + 1 1/2 tsp maple syrup + 1/2 tsp vanilla extract – *If using a dry sweetener, you might have to add a little water or oil to the dough.  If using a liquid sweetener, don’t add any extra liquid 
1/8 tsp salt
2 Tbsp flour or oat bran – we used 2 Tbsp protein powder
Chocolate chips – we omitted the chocolate chips for the kids, but I pushed some into mine before I ate them 🙂 For Dairy free try using cacao nibs, or Enjoy Life’s dairy free chocolate chips

Combine all the ingredients into a small bowl,  and mix until well incorporated.  Roll into balls and serve!

Makes 10-14 balls, depending on how many you eat while making them.

Store in an air tight container in the fridge.
