My daughter and I had to force ourselves to leave some for her!
“Tzatziki ” Cucumbers
adapted from Grandma June’s recipe
1 cucumber, washed and quartered – we like to use a Burpless cucumber
1/4 diced white onion
6 oz sour cream – we like Simply Sour Cream by Kraft
1/4 tsp apple cider vinegar (ACV)
Pinch of Salt
In a small to medium size bowl add cucumbers and onion. Stir in sour cream, salt, and add the vinegar. If this mixture is still pretty think, drizzle a tad bit more ACV into the bowl to thin it out. It should have the constancy of Greek yogurt.
Cover and refrigerate for up to 5 days.
We like to eat them straight out of the bowl, but these would be delicious served next to lamb, beef, or turkey!
