Chocolate Peanut Butter Quinoa Breakfast – dairy free, gluten free

Just because I wanted peanut butter and chocolate for breakfast.

Chocolate Peanut Butter Quinoa Breakfast

1 cup rice milk – substitute milk of your choice
1 cup water
1 cup quinoa, rinsed and drained – pour quinoa into a breakfast bowl and cover with water. Allow to soak for 5-10 minutes, then rinse in a fine mesh sieve. Pour the quinoa back into the bowl, allow to soak for another 5-10 minutes, rinse and set aside
1/2 Tbps of honey – can add more if needs more sweetness
1 Tbsp dark chocolate cocoa powder – any cocoa powder will do
1 Tbsp peanut butter
1/4 tsp vanilla

Combine milk, water, quinoa and honey in a medium-large pot. Bring to a boil over high heat and add cocoa powder, peanut butter and vanilla. Stir to combine. Reduce heat to medium-low and cover. Simmer for 15-17 minutes, or until most of the liquid is absorbed. Stir occasionally.

Remove from heat, cover and let sit for another 5 minutes.

Serve in your favorite bowls!
