Dark Side Salsa and Dust Corn

This past weekend we celebrated my husbands birthday with Star Wars. On the menu was Dark Side Salsa with Dust Corn, Womp Rat and Nerf Steak Fajitas, Rishi Corn, Death Star Watermelon, and more. One of my favorites those was the Dark Side Salsa recipe I found courtesy of Cooking My Way Through The Star Wars Galaxy.  This blog was amazing and a must for any Star Wars fan.

Here it is; my notes are in italics:

Dark Side Salsa

6 Roma tomatoes, diced – we used 2 Roma and 3 Beefsteak
1 small onion, skinned and diced
1 small avocado, pit removed and diced – An easy way to dice an avocado: Carefully run the blade of a sharp knife through the flesh of the avocado, first lengthwise, then cross wise creating a hatch pattern. When finished, use a spoon to scoop out the pre-cut “squares” into your bowl. Viola!
1 can mild diced green chilis, drained
1 c frozen corn – dump your frozen corn into a bowl of water to defrost quickly.  Remember to strain them before using them!
1 lime
Salt and Pepper

In a medium bowl combine all the ingredients together and stir.  Add salt and pepper to taste.

Serve with Dust Corn (aka corn chips) or over fajitas.

Serves 4-8  – This salsa can be made ahead of time and placed in the fridge. Lasts for 3 days in the fridge.
