{New} Roasted Italian Sausage with Cherry Tomatoes and White Beans

I am the only one in my family who likes tomatoes – that is outside of spaghetti sauce and salsa, so, to say my children and my husband love this recipe – as is –  is a HUGE compliment to this dish.

Here it is; my notes are in italic:

Roasted Italian Sausage with Tomatoes and White Beans
adapted from USA Weekend Magazine and my mom’s recipe

4-5 Sweet Italian Sausages, cut into 2″ pieces – we use Costco’s sausage as it is gluten-free
1-2 pints of cherry tomatoes
1 lrg onion, peeled and cut into quarters
4 clovers of garlic, peeled and minced
3 Tbsp olive oil – we used grapeseed oil 
2 cans cannellini beans, drained with 1/2 cup liquid reserved – if you cannot find cannellini beans, any white beans will work
1 1/2 Tbsp balsamic vinegar
2 tsp. dried thyme
1 whole bay leaf
salt and pepper

Adjust the oven rack to its lowest position and set the oven to 425*. 

Mix the first four ingredients together with herbs in a roasting pan. Drizzle with olive oil and vinegar.

Set the pan in the oven and roast until the sausages are brown and the tomatoes have burst, approx. 45 minutes.

Remove from oven, stir in beans and reserved liquids and return to the oven. Continue baking for another 10 minutes, until the beans are cooked through.

Remove bay leaf and transfer to serving dish.

Serves 3-4 people
