As I sat there staring at the turning three acorn squash, I thought there had to be something I could with them that wasn’t savory. Then I found a recipe for baked acorn squash with sugar and cinnamon and had to make them!
What I loved the most about this recipe is it is made in the microwave. Yep, the microwave, and it is done in 10 minutes.
Here it is; my notes are in italics:
Cinnamon Sugar Acorn Squash
2-3 small-medium acorn squashes, rinsed
3-4 Tbsp. melted butter
Cut each acorn squash in half and scrap the seeds and “goop” out. Make sure to clean it well as the string will create this hard mass when cooked.
Using a tablespoon, spoon the melted butter on and into the squash, tipping the squash so the butter covers all of the flesh.
Using your clean fingers, sprinkle brown sugar over the top of the squash. Do not go heavy handed, just spring enough to lightly cover the edges and middle.
Using a fork, sprinkle the cinnamon over the squash.
Place on a microwave save plate and nuke on high for 10 minutes, or until fork tender.
Carefully remove from microwave and remove the flesh from the rind. You could also opt to spoon out the flesh and leave the shell.
