I’m making Waffles! – Gluten-free

Every Saturday morning our family makes breakfast together. Mostly we make pancakes, pink ones, blueberry ones, cinnamon ones, but every now and then we have to make waffles. After several months of trying, we have finally found the perfect waffle recipe.

We used Wholesome Chows All-Purpose Gluten-Free Flour which already contains 1/2 tsp baking soda and 1/2 tsp salt per cup and xantham gum.  If you are using a different gluten-free all-purpose flour, please add a 1/2 tsp baking soda and a 1/2 tsp salt to the recipe. If the flour blend does not contain xantham gum, add it according to the directions on the package. Please know that the texture and taste may change slightly with different flours, but the results should still be delicious!

Best-Ever Easy Waffles

1 cup Wholesome Chow All-Purpose Gluten-Free Flour
1 tsp. baking powder
1/4 tsp salt (omitted) –  add back in if you are using a different all-purpose gluten-free flour
1/4 tsp baking soda (omitted) – add back in if you are using a different all-purpose gluten-free flour
2 tsp granulated sugar
2 tsp white vinegar – you can replace the vinegar with lemon juice, if needs be
1 cup rice milk – use whatever milk you have on hand
1 duck egg – you can use a chicken egg or egg substitute like Egg Beaters
2 Tbs butter, melted

In a medium bowl combine dry ingredients: flour, baking powder, salt, and baking soda if using, and sugar. Set aside

In a small bowl beat egg until the yolk is fully incorporated into the white. Add milk, vinegar, and butter to egg. Whisk to combine.

Pour egg mixture into flour and whisk to combine. Once the mixture is smooth, set aside and turn on waffle iron.

Depending on the type of waffle iron you use, you may need to spray the griddle with Pam before adding the batter. 

Using a 1/2 a cup slowly pour the batter into the griddle until the bumps are 3/4 of the way covered. close lid and wait until the light goes off. We recommend using a fork to remove the freshly baked waffles.

Smother with butter and serve!
