Smoothies – Lactose-free, gluten-free

Our family loves smoothies, but I needed a drink that was  dairy-free with fiber and protein. It also had to taste good and have antioxidants. So I set to task and found a great combination using coconut milk, coconut flour, and a new product I found called Show Me The Whey by New Frontiers.

Here it is!

2 cups frozen blueberries
1 cup frozen strawberries
1 scoop Show Me The Whey protein powder – For Dairy-free substitute Show Me The Whey with Brighter Life Premium Whey
1/2 tsp coconut flour
4-6 cups coconut milk

In your favorite blender add blueberries and strawberries. Sprinkle coconut flour and protein powder over the berries.

Slowly add coconut milk to the blender. IF your berries seize up into a giant mass, you can use the end of a spoon to break it up.

If your blender has a “smoothie” setting, we recommend using it. Otherwise, blend on HIGH until everything is well incorporated. Coconut flour is a thirsty flour, so you may need to add more milk to find the consistency you like. Start with 4 cups and go from there.

Serve immediately!

Serves: 3-4 people


To make this recipe with dairy free protein powder, try using pea protein! Same amount of protein, without the dairy!

Try adding a 1/8 of a tsp of Matcha powder to  your smoothie mix, before blending for an antioxidant boost and additional taste! the higher quality your Matcha, the smoother the taste. Do not use half-and-half mixes, as they are more whole tea and change the taste of the smoothing.

Try adding freshly brewed green tea, or red tea, to your smoothies. Remember to reduce the amount of non-dairy milk you add, or remove it all together.

Try replacing half the milk with apple juice, for bonus sweetness!
